I am using fox air shocks for my buggy... everytime i get in it, it drops about 2 inches. Kind of annoying. I am guessing the only way around this would be coil over shocks. Or... do i need to change my valving?

You're just getting to the loaded ride height. Add some air.

Yeah you want it to squat to 60-70% of travel. For smooth ride shocks need to travel both up and down. Nitrogen to set ride height, oil&valving to keep from bottoming out on the bumps.

It'd do that with coils of the same rate too. You've probably just got the spring rate a little low, add a bit more oil.
