Would you run into a similiar problem with doing a bushing? Wouldn't it dig a grove it to the bushing?

Seems to me that the u joint would be an easy replacement and more so if its a stock over the counter item....

BDKW1. I used to be a crew chief on a blackhawk helicopter. I see that there are questions and comments from others about what to use for power transmission between the goldwing engine and the diff you are using. What sikorski designed for very low angle power transmission joints is a flexible coupling. The coupling consisted of 10-20 .030-.040" stainless steel disks stacked together. This arrangement allows for a very strong joint with some flexibility. I see you have already found the solution you are happy with, but if for some reason it doesn't work the way you'd like it to, this might definitely be an option.

Here is a pic of the flex-pack installed on a blackhawk. It took me almost an hour to find this picture, and if I could have found a better one I would have used it instead. I hope this at least gives you an idea of what I am talking about.

Why not use a "hardy" disc like the BMW and Mercedes use in their drive shafts? Wouldn't this work for this type of application?

Almost any rwd car uses them. They should work just fine, but you would need to make the adapter to fit them. It has three prongs that bolt to it.
