With a little careful shopping (and maybe a bit of time) you should be able to find a deal on the bigger motors like the 1000's and 1100's etc (in case your not brand specific.) the larger than that group (hayabusa and zx14 are gonna be $$$ unless you find a steal (literally).
The smaller motors will work but the bigger motors will of course be better. One thing to keep in mind is gear ratio (and tire size as it relates directly) The smaller the motor the more deeper the gearing it will NEED or it will suffer. The larger motor will pull higher gearing better but still the deeper gearing will keep the power flowing better no matter what the engine.

Mind if I but in and ask, if the set-up were to be a straight chain from engine sprocket to final spool (ignore a tensioning sprocket), what size sprockets are optimum for a 600 to 750 cc engine utilizing 25 inch AT type tires (not paddles)? Assume everything else is "typical".

I run a 600 cbr with a 14/62 ratio. I started with a 14/60 but the difference is unnoticeable to me. That's in a single seater. In a 2 seater with a 600 cbr I ran a 14/66 ratio and that pulled pretty good. No wheelies though. Doc

Personally, I'd suggest running a Suzuki TL-1000R motor. V-Twin torque, fuel injected, narrow, lightweight and sounds incredible. Of course I'm biased since I'm trying to sell one. Seriously, a GSXR-750 from year 2000+ should be fairly reasonable to buy and more than powerful enough. If you don't have access to a local dismantler, try eBay or a forum that I watch dwarfcarracing.com.

Take a look at the later fuel injected GSXR750 it is cheaper than the 1000cc engines and has almost as much HP, just a little less TQ. It also seems that kids like to crash them just as much to fuel the salvage market.
